Spinach, eaten raw, has a very light and green taste. It is not crunchy the way that some lettuces are, and raw spinach isn't bitter at all, which is why it's such a great leafy green to include in salads. Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2.
