Produced by Fairwind Farms in Brooks, Alberta, this cheese is made from the milk of goats that have access to pasture year round and during winter months they are given shelter from the elements but still have access to fresh air and space to roam if desired. Fairwind Farms feeds their goats a diet of their own produced hay and greens, as well as a whole grain treat they give the goats during their twice daily milking.
