Always use a cloth when shucking oysters for stability and leverage. Shuck on a level surface.
Identify the hinge of the oyster, find a the small opening and begin working the shucker tip into the hole until you can feel it penetrate the oyster. Rotate your wrist and turn the shucker to pop open the oyster. Take the oyster shucker and run it gently underneath the oyster near the lip of the cup to sever the adductor muscle which helps the oyster open and close. Serve with fresh lemon, hot sauce or mignonette
