Pork butt, despite its colourful name, does not come from anywhere near the butt or behind of the pig. In fact, quite the opposite. Pork butt is a cut of meat from the shoulder of the pig. Pork butt is the cut most typically used in pulled pork. It's a moderately tough cut of pork with a good deal of connective tissue. Pork butt and pork shoulder cuts do best with long, slow cooking and are excellent choices to be barbecued, braised, or used as stew meat, as well as roasted or cooked in slow-cookers. They also stand up well to strong flavours (think barbecue sauce or chiles) because they have a strong flavour themselves.
All of our meat is humanely handled and inspected in facilities licensed by the province of Alberta.
Bear and the Flower Farm is devoted to providing superior and humanely outdoor raised pork products, while revolutionizing the pork industry towards a globally conscious transformation.
Bear and the Flower outdoor-raised pigs are happy year-round, with more than 1000 square footage per pig to roam, feed and play, supporting pasture regeneration and allowing for more waterers, shelters, feeders and ease of handling. Not only content to set the highest standards for ethical, nutrition and genetics, Bear and the Flower have taken their pork one step further into the food safety side of farming. They are now the first outdoor hog raised hog producer in the country to achieve Canadian Quality Assurance (CQA). Their animals are completely free of Hormones and Antibiotics.
