The Tenderloin, also known as Filet Mignon, is from the tenderest part of the beef. Lean yet succulent, with a fine buttery texture. These are the narrow end part that is left over after cutting steaks.
We dry age our beef for a minimum of 14 days. All of our meat is humanely handled and inspected in facilities licensed by the province of Alberta.
