Our farm grown hard red spring wheat is carefully milled in small batches to preserve nutrients and flavour. A source of fibre with nutrients from the whole grain, it is good for pancakes, bread, muffins, and other baked goods. 7/8 cup whole-wheat substitutes for one cup of white flour. Grainworks Organic Whole Wheat Flour normally has a protein content of 12 – 15% and is ideal for whole grain bread, or multipurpose baking/kitchen use. It can be used for cookies and pastries, though it will not yield as light texture as pastry or unbleached flour. It can also be combined with our Grainworks Organic Unbleached Wheat Flour or other flours to create your custom whole-grain blend.
