Watermelon Salad
This is a great way to add some sweetness to your savoury BBQ. This recipe can also be used for a delicious salsa too, just cut your ingredients smaller.

This will be your new favourite. For a true salad, you can cut the watermelon in to large cubes. If you wanted to try serve it another way, cut the watermelon (with the skin on) into wedges and use it to serve instead no dishes required.
You can also easily turn this in to a salsa and serve with tortilla chips. Just dice the ingredients smaller for a salsa, and omit the cucumber if you like.
Ingredients

1/2 watermelon, cut in to large cubes or wedges

1/4 cup cilantro, chopped

½ cup of diced cucumbers

½ of a red onion sliced

2 jalapeno peppers diced
2 limes juiced

Salt and pepper to taste
1 tsp red chili flakes
Directions
Chop all the ingredients
In a small bowl whisk together dressing ingredients – cilantro, jalapeño, lime juice, salt, olive oil and chili flakes.
Spoon dressing over the top of the watermelon and finish with sea salt and an extra pinch of chili flakes.
Serve Right Away and Enjoy
