Always keep a package of gnocchi in your freezer for a quick weeknight meal. Its a game-changer when you can skip the boiling and roast it in the oven!

Gnocchi
Roasted Red Peppers
Cherry or Grape Tomatoes
Swiss Chard or Arugula
Parmesan Cheese
Olive Oil
Heat oven to 400F. Add bag of frozen gnocchi to baking sheet, drizzle with olive oil and season with salt and pepper. Toss well to combine.
Spread out gnocchi in even layer on pan and roast for 10 mins.
Slice one jar of roasted red peppers, chop swiss chard or arugula and halve cherry tomatoes. Place vegetables on pan, drizzle with olive oil, salt and pepper and toss with gnocchi.
Return to oven and roast until swiss chard is wilted and tomatoes are blistering.
Serve and garnish with parmesan cheese.
