Thai Chicken Yellow Curry

Sweet Bell Peppers, Lightly Spiced Yellow Curry, Basmati Rice and Thai Basil
Ingredients

1 Tub Thai Yellow Curry

1 Cup Basmati Rice

1.5 Cup Chicken Stock
-
1 Chicken Breast
-
1 Green Pepper
-
1 Red Pepper
-
1 Yellow Pepper
-
1 Yellow Onion
-
Thai Basil
Lime Wedge
Sliced Green Onion
Directions
Make Basmati Rice according to package directions
Preheat a saute pan on high, add a Tbsp of Canola oil
Season Chicken Breast with salt and pepper. Sear chicken on both sides in the saute pan until golden brown (2-3min per side). Finish in the oven (400F) for another 5-6min or until the internal temperature reaches 165F. Allow chicken to rest for 5min
Slice your bell peppers and onions. Saute in a medium sauce pan for 2-3 minutes to soften the veggies. Add Thai Yellow Curry and bring to a boil, turn heat down and simmer for 5-7min.
Slice your chicken breast into strips
Add rice to the middle of the plate, spoon over curry and vegetables. Top with sliced chicken, sliced green onions and torn thai basil. Garnish with a lime wedge and enjoy!
