A fun and zingy bowl full of bright vegetables and greens. Thai flavours combined with loads of fresh veggies, greens and couscous.
Ingredients

1 Chicken Breast

1 Cup Couscous (pre-cooked)

1 Cup Baby Arugula
-
1/4 Cup Mini Cucumber (diced)

1/4 Cup Mini Mixed Bell Pepper (sliced)

1/4 Cup Red Onion (thinly sliced)
-
1/4 Cup Carrot (shredded)
-
1/4 Cup Red Cabbage (shredded)

1 Tbsp Garlic Chives (sliced)

2 Tbsp Thai Basil (torn)

2 Tbsp Plain Yogurt or Sour Cream
-
2 Tbsp Pad Thai Sauce
1 Tbsp Toasted Sesame Seeds (optional)
1 Lime Wedge (optional)
Directions
Season your chicken breast and bake or grill until internal temp reaches at least 165F. Rest and slice
Start assembling your bowl. Place the cous cous down as the base.
Lay the arugula down on top of the couscous
Arrange your vegetables all around the bowl and lay the chicken on top.
Mix the yogurt/sour cream and pad thai sauce together and drizzle over the chicken and veggies.
Garnish with torn thai basil and garlic chives
Sprinkle Sesame Seeds all over the bowl
Garnish with lime wedge
