Sweet Hoisin Chicken Stir Fry

A super quick stir fry for the whole family! Fluffly basmati rice, crisp veggies and juicy chicken are bound with a sticky sweet hoisin and soy sauce.
Ingredients

2 Chicken Breasts (sliced or cubed)

1 Tbsp Ginger (grated)

2 Cloves Garlic (grated)

1 Orange Bell Pepper (sliced)

1 Red Bell Pepper (sliced)

1 Red Onion (sliced)

1 Carrot (grated)

1/2 Cup Sweet Hoisin Sauce

1/2 Cup Chicken Stock
1/4 Cup Soy Sauce

1 Tbsp Chili Garlic Crunch (optional)
Directions
Start the Basmati Rice, cook according to package directions.
Season your chicken strips or cubes with salt and pepper. Sear in a very hot pan until browned nicely (5-6min). Remove and allow to rest.
Toss your sliced vegetables as well as the garlic and ginger in the pan and stir fry for 3-5min. Deglaze with the chicken stock and cook for 2min.
Add the chicken, soy sauce and sweet hoisin to the pan, stir to combine and cook for another 5min or until the sauce has reduced slightly and everything is coated and saucy.
Serve over fluffly basmati rice. Garnish with anything you'd like but we love the chili garlic crunch.
Recipe Note
Stir Frys are all about garnishes in my opinion. Fresh cilantro sprigs, sliced green onion, toasted sesame seeds or crushed peanuts, bean sprouts, sesame oil or chili oil, garlic crunch, squeezes of fresh lime, hot sauce (Sriracha or Sambal Oelek).
