Stuffed French Toast (For Momma)

With only a few additional pantry items, you can elevate your french toast game this Mother's Day with a sweet and salty twist.
Ingredients

4 slices of White Bread (or Whole Wheat, day old preferably)

1/2 Cup Chocolate Peanut Butter
-
250g Cream Cheese (softened)
2 Ripe Bananas (sliced into coins)

4 eggs
1/2 Cup sugar
-
1 Cup Milk
1 Tbsp Vanilla Extract
-
1 tsp Salt
As much Maple Syrup as you can handle

Haskap Berry Topping (Optional)

Whip Cream (Optional)
Directions
Make egg mixture by whisking together the eggs, milk, sugar, vanilla and salt.
Build the sandwich by spreading cream cheese on one slice of bread, layer with sliced bananas and then top with the other piece of bread spread with chocolate peanut butter.
Press down on the sandwich so it will hold better and carefully dip into the egg mixture on both sides.
Preheat a non stick pan to medium high, add a tablespoon of butter and carefully lay the sandwich in the pan. Sear until golden brown and cooked on both sides.
Serve immediately with syrup, berry topping and whip cream.
Recipe Note
Make sure to leave your sliced bread out on the counter overnight to become stale, it will help to absorb the egg mixture and make it easier to build the sandwich.
Whip Vital Greens Organic cream with a tablespoon of vanilla extract and a 1/4 cup sugar for an even more indulgent topping.
