Spring Asparagus Salad

Ingredients

1 package of Pea Shoots
-
½ Large Cucumber

1 Lb of Asparagus

¼ cup extra virgin olive oil
1 tsp dijon mustard
- Juice of ½ -1 lemon
- Salt and black pepper to taste

Optional: Crumbled Feta or Chevre
Directions
In bowl, add the dijon mustard and lemon juice.
- Slowly whisk in the olive oil, the dressing won’t be fully emulsified, more of a broken vinaigrette.
Finely slice cucumbers and asparagus at an angle or using a vegetable peeler shave long ribbons.
Toss the cucumbers and asparagus with the pea shoots and salad dressing and season with salt and pepper.
Top with optional feta or chevre cheese and enjoy!
