Spicy chicken breast, crisp broccolini and bell peppers marinated and tossed with locally made Pad Kra Pow Thai sauce
Ingredients

1 Chicken Breast (or Thighs)

1/4lb Broccolini (sliced into coins and 1/4" stem/heads)
1 Yellow Onion (sliced)

1 Green Pepper (sliced or diced)
-
1 Red Pepper (sliced or diced)

1/2 Jar Pad Kra Pow Thai Street Sauce

1 Cup Chicken Stock
1 Tbsp Cornstarch

3-4 Leaves Thai Basil
Directions
Take your thawed chicken breast or thighs and marinate with 1-2 Tbsps of the Pad Kra Pow. Let marinate for at least an hour
Bake your chicken at 375F for approximately 10-15min or until the internal temperature reads 165F. Allow to rest
In a large saute pan, heat 1 Tbsp Canola oil and add your broccolini, yellow onions and bell peppers. Saute on high heat for 3-4 minutes, stirring frequently.
Once the veggies start to soften slightly and take on a little color, add 1 Tbsp of Pad Kra Pow and stir in, saute for 1min.
Deglaze with Chicken stock and ensure you scrape all the yummy brown bits from the bottom of the pan.
in a small bowl, mix the cornstarch with 2 Tbsp of cold water and stir to incorporate. Add to your stir fried veggies.
The sauce and veggies should thicken up and form a nice sauce, if it is too thick, add some more stock or water until you have a slightly thick glossy sauce.
Add your favorite side to this dish such as vermicelli noodles, basmati rice or short grain brown rice. Spoon the veggies on top of your side dish and slice your chicken breast. Lay the breast on top of the veggies and spoon additional sauce on top and around.
Garnish with torn Thai Basil and green onions if using. Enjoy, this dish packs a punch!
