Roasted Garlic Mashed Potatoes

Garlic - 2 Heads

Olive Oil - 1 TBSP

Russet Potatoes - 3 pounds

Butter - 1 cup

Whole Milk - 1 cup
Bay Leaves - 3 each
Salt & Pepper
Directions
Preheat oven to 400F
Peel garlic, slice off the tips of the garlic to reveal the tops of each clove. Drizzle with Oliveoil and wrap garlic in tinfoil. Roast in oven until caramelized and tender. About 40 minutes
Peel the potatoes, rinse, and cut into uniform 2-inch cubes. Fill a large pot with cold water and add potatoes, bay leaves. Bring to a boil over high heat - turn to low & simmer until potatoes are fork tender - but not falling apart.
Strain the potatoes, Mash them using a ricer or potato masher. Squeeze the cloves from the head of garlic into the mashed potatoes and mix until smooth
In a separate sauce pan, melt the butter and milk together until both are hot, but not boiling. Add the warmed dairy to your mashed potatoes. Season with Salt & Pepper and Enjoy!
