Pre-heat oven to 375F
Slice fennel into quarters or 1 inch pieces
Place fennel in roasting pan and toss with olive oil, salt and pepper
Cover and roast for 20 mins. Remove cover and roast for another 20 mins or longer until fennel is browned.
Optional - add 1-2 tbsp of butter 10 mins prior to removing from oven.
Garnish with fennel fronds
