Potato Gratin

This is a simple recipe that always impresses a crowd. Use your judgement on the proportion of ingredients you want to use... you really cant mess this one up!
Directions
Thinly slice potatoes on a mandolin, and let soak for 30mins in warm water and salt to season. While potatoes are soaking; Bring a mixture of cream, butter and minced garlic to a boil. Set aside.
In a baking dish, begin by layering the potatoes in one flat even layer. Pour a small amount of cream mixture; enough to coat the potatoes without excess spillage. Sprinkle chopped thyme and some grated gouda cheese.
Repeat step two, one layer of potato, one layer of cream / cheese / thyme; until you have a nice large stack of potato gratin.
Cover the dish with tin foil and cook in the oven for 75mins at 350F.
Remove cover and sprinkle layer of Gouda cheese, finishing in the oven uncovered for an additional 30mins.
Let rest before serving, for at least 15mins to let everything settle down and come together.
