Another way of saying Cheesy Mashed Potatoes! This upgrade to mashed potatoes is sure to make your New Year’s eve a success.
Ingredients

5 lb Potatoes

1 Cup Cream

¼ Cup Butter

Cheese Curds
2 Bay Leaves

5-6 Sprigs Fresh Thyme

1 Clove Garlic
Directions
Boil water and cook potatoes. Use heavily salted water to ensure the potatoes are well seasoned. Add aromatics to the pot - bay leaves, thyme and garlic - which further enhance the flavour of the potatoes.
Once the potatoes have boiled and are cooked - remove the bay leaves and thyme. We can mash the garlic right into the potatoes!
Some mashed potato recipes call for a rinse after the potatoes are cooked - not this recipe! We want all the starch we can - as the process in the next step allows us to release the starches in the potato - creating a very smooth, sticky delicious side dish.
Mash the potatoes while they’re still hot (using a ricer or or food mill) for an extra smooth puree, or if you don’t have these at home a masher or hand blender will do just fine.
Return the mash to a pot, and bring back to the heat. Here, we will want to add 1 cup Cream and ¼ cup Butter - stirring the entire time. You want to stir and stir these potatoes while you incorporate the dairy - as it will continue to release the starches in the potatoes.
Once your arm is nice and tired from stirring - it’s time to finish up! Add the package of cheese curds and continue to stir until they are melted.
