No Egg Chilaquiles Verde
Chilaquiles is a beautiful Mexican dish full of bright vibrant flavors. Great for either breakfast or brunch, take the time and splurge on this recipe.
2 Cups (1/2 Bag) Corn Tortilla Chips
2 Spicy Mexican Chorizos (thawed and casing removed)
1/2 Red Onion (julienned)
1/4 Cup Crumbled Feta Cheese
1/4 Cup Medley Tomatoes (halved)
1/4 Cup Chipotle Cream Dip
1/2 Cup Salsa Verde
1//4 Fresh Jalapeno (Optional / Sliced)
Cilantro Sprigs (Optional)
Lime Wedge (Optional)
Take the Chorizo out of the casing and crumble into a pre-heated pan (on high). Cook Chorizo until it is nicely caramelized and cooked through (about 7-10min)
Heat 1/2 Cup of Salsa Verde for 2 min or until hot
In a large bowl, toss the tortilla chips with the hot salsa verde
Lay the chips/sauce down on a large plate and spoon the chorizo all over.
Garnish with jalapeno slices, julienned red onion, halved medley tomaotes and crumbled goat's cheese.
Drizzle with remaining Salsa Verde and sour cream
Garnish with Cilantro and Lime Wedge
For the power breakfast, add scrambled eggs and a side of refried beans or avocado slices.
