New Season Asparagus, Guanciale & Spaetzle Pasta Recipe

New Season Asparagus, Guanciale and Spaetzle Pasta

Tender new season asparagus, crispy guanciale, and spaetzle come together in a garlic lemon butter sauce with spinach, parmesan, parsley and chive for the ultimate spring pasta dish!
Ingredients

1/2lb Asparaugs (cut into 1/2" coins and spears)

1/2 pc Guanciale (small dice)

1 bag Spaetzle
3 cloves Garlic (minced)

1/2 bag of Spinach
1/2 bunch flat leaf parsley (chopped)

2 Tbsp Chives (sliced)

1 Tbsp Butter

1 Cup Chicken Stock
-
1/4 Cup Parmesan Cheese (grated)
Juice of a half lemon
1/4 Cup White Wine (optional)
Salt and Pepper to taste
Directions
Bring a large pot of water to a boil and season heavily with salt (should taste like the ocean!). Add Spaetzle and cook until they float to the top. Strain and allow to cool slightly.
In a saute pan, add a splash of canola oil and add the diced guanciale
Once the guanciale has started to crisp up (2-3min), add the minced garlic and cook for another minute.
Add the asparagus coins and spears and continue to saute for a minute.
Deglaze with white wine if you are using, otherwise, use half the chicken stock. Stir and scrape the bottom of the pan to release all the tasty brown bits.
Add Spaetzle to the pan and toss to coat evenly.
Add the whole spinach leaves to the pan and wilt down by tossing with the rest of the ingredients.
Add the rest of the chicken stock and butter and continue to toss and cook down. Add half the parmesan cheese and allow the sauce to come together and reduce until "creamy".
Add parsley and lemon juice, season with salt and pepper.
Spoon out into two bowls, top with remaining parmesan cheese and chopped chives. Enjoy!
Recipe Note
This versatile quick pasta can be boosted by adding any vegetable such as zucchinni or peas. Try it with chicken or prawns for more protein!
