Honey Bourbon Glazed Ham

Ingredients
1 Ham Roast
1/2 Cup Brown Sugar
1 Tbsp Fennel Seeds
1 Tbsp Coriander Seed
2 Star Anise Pods
1 Bay Leaf
1 Cinnamon Stick

2 Garlic Cloves
1/2" piece of fresh Ginger
1 dried red chile
1 Tsp finely grated orange or lemon zest
1 Cup Bourbon
1 Tbsp low-sodium Soy Sauce

1 Tbsp Mob Honey
Directions
Preheat your oven to 325F. Place the Ham in a large roasting pan and add 1 cup of water. Cover the pan with foil and bake the ham for approximately 2.5 hours, basting occasionally with the juices until the thickest part of the reads 120F.
In a medium saucepan, combine the brown sugar with 2 tablespoons of water and cook over medium heat, swirling the pan occasionally. Cook until a light golden caramel forms, approximately 8-10min.
Remove from heat and quickly add the fennel seed, coriander seed, star anise, bay leaf, cinnamon, garlic, ginger, chile and orange zest. Let steep for a minute and then carefully add bourbon, soy sauce and honey.
Return back to heat and simmer until thickened, approximately 10min.
Remove foil from the roasting pan and glaze the ham. Continue to glaze every 10min for a half hour. The glaze should be nicely caramelized on top.
Remove the ham and allow to rest for 10-15min before carving. Serve with reserved pan juices.
