Creamy Pesto Parmesan Chicken
Sear chicken breast on medium heat and put in oven for 10 minutes, After the oven, flip the chicken breast over and add butter to the pan. Baste the chicken and return to oven until cooked through. Reserve.
Add Cherry Tomatoes, Olive Oil, Salt & Pepper to a bake sheet. Roast in the oven on Broil 500F until Charred, about 10 minutes
In a heavy sauce pan, cook Shallots & Garlic together until translucent. Season well with Salt & Pepper. Add Pesto and heavy cream to pan and incorporate.
Add chicken to sauce Pan, Blistered Cherry Tomatoes, and cover the chicken in sliced Mild Gouda
Broil the Chicken in oven at 500F to melt the cheese
