Chicken Green Goddess Salad
BBQ meats salad, the best of both worlds. You can use any cut of chicken you like. In the Recipe, we suggest roasting a whole bird on the bbq, smoker, or your oven. But if you want something quicker, you can use chicken breasts or thighs.

You can make the dressing and chicken ahead of time. This recipe is great for a party or for the RV as you can make it ahead of time.
Ingredients

1 Whole Chicken ( or any other type of Chicken)
1 Can of Beer
1/2 Cup Parsley

1/4 Cup Basil Leaves

1/4 Cup Chopped Dill

1 Tablespoon Oregano Leaves

3/4 Cup Garlic Mayonnaise
2 1/2 Tablespoons Lemon Juice

2 Tablespoons Chopped Chives
Salt and Pepper

1 Sweet Banana Pepper
3 Celery Ribs, Sliced Thinly

Directions
Roasted Chicken
Preheat BBQ to 350 F - 400 F.
Open Beer Can. Place Bird on Top on the Beer Can and place on your Grill. Make sure the bbq is on Medium Heat. You just want to maintain the 350 F- 400 F
Open Second Beer Can and relax for the next hour. This step is optional but can be repeated as often as needed
Green Goddess Dressing
In a food processor, pulse the anchovies, garlic, parsley, basil, dill and oregano until coarsely chopped. Add the mayonnaise and lemon juice and process until smooth. Fold in the chives; season with salt and pepper.
In a large bowl, toss the ciabatta with the chicken, piquillo peppers, celery and olives. Add the dressing and toss to coat. Season with salt and pepper and serve.
